I can’t leave well enough alone. Ever. With rare exceptions, I play with recipes, modify them, and rearrange them to meet various tastes or limitations. I like making generic things my own, and food offers a relatively unique opportunity to bend things to your particular whim. Traditionally, Chex mix is good but somewhat bland.
The standard Chex recipe is:
3 C Corn Chex
3 C Rice Chex
3 C Wheat Chex
1 C peanuts
1 C pretzel bites
1 C
6 T butter
2 T Worcestershire sauce
1 1/2 teaspoon seasoned salt
1 teaspoon garlic powder
1/2 teaspoon onion powderMy Changes to this recipe:
I only use Corn and Wheat Chex, and I use 6 cups of wheat and 3 cups of corn
1 cup pistachios (instead of peanuts)
1 cup rye chips (instead of pretzels)
2 t garlic powder (instead of 1)
1 t onion powder (instead of 1/2 t)
2 1/2 T Worcestershire sauce (instead of 2T)Directions:
1. Heat oven to 250°F. In large bowl,
2. mix cereals, nuts, pretzels and rye chips; set aside.
3. In ungreased large roasting pan, melt butter in oven.
4. Stir in seasonings.
5. Gradually stir in cereal mixture until evenly coated.
6. Bake 1 hour, stirring every 15 minutes. Spread on paper towels to cool, about 15 minutes.
